The Shoppes at Marina Bay Sands may be home to luxurious boutiques, but YU Cuisine, with its floor-to-ceiling glass facade, dramatic interior and luxe furnishings, easily fits in. It is this aesthetic that epitomises YU Cuisine's contemporary seafood, dim sum and champagne bar concept. The core of the business lies in traditionally prepared Hong Kong-style dishes, but presented in a modern, artistic fashion. Fine examples are vegetable dishes such as fungus flower with sugar pea leaves in superior broth, where a generous topping of bright orange cordycep roots provides a fresh, chewy crunch, as well as the conpoy wintergourd with small pak choy, plated with the flair of a global gourmand.

As existing customers would agree, all meals should include the signature platter of roasted and barbecued pork - think cubes of succulent fatty pork flesh topped with crisp flavourful skin. What should ensue is a plate of juicy spare ribs with salted egg, smothered in a perfectly seasoned sauce.

But beyond the scrumptious array of meat dishes, YU Cuisines seafood options - from entrees of cold Alaskan king crab claw and Hangzhou jellyfish with vinegar to Australian lobster sashimi as well as black pepper crab and Hong Kong Aberdeen chilli crab - are world-class.
